Chicken Spinach Pasta

Determined by popular demand this next recipe is absolutely delicious! I think it is one of our favorite meals, it doesn’t take too much time, and it is pretty cheap to make! This dish is great if you have a few people coming over and I know it is my go-to and everyone seems to love it so far! I definitely want to preface this with the fact that this dish is pretty garlic-y so if you don’t like garlic this one is not for you! And also for all the seasonings regarding any dish I make, I don’t measure them in the slightest, I do a pretty good coating and go from there based off of taste!
Ingredients:

  • 1 box of penne pasta
  • 1-2 lb of chicken breast cut into 1-inch cubes
  • Onion powder
  • Garlic powder
  • Tony Chachere’s Creole Seasoning
  • 1 tbsp minced garlic
  • 2 tsp. Olive oil
  • 1 can cream of mushroom soup
  • 1 c. heavy whipping cream
  • 10 oz fresh spinach
  • 2 c. mozzarella or cheddar cheese (we prefer cheddar)
  • Pinch of salt and pepper


Directions:

  • Cook pasta according to the box. In a deep skillet over medium heat, add chicken, garlic powder, onion powder, Tony’s, and olive oil, and cook for 5 minutes or until it is no longer pink. (Make sure your setting isn’t too high on your stove or the chicken will be dry)
  • Once your chicken is cooked add minced garlic as well as the cream of mushroom soup and the heavy whipping cream. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 2 minutes. Stir in the spinach, cheese, and salt and pepper; cook for 1-2 minutes or until spinach is wilted and cheese is melted, stirring constantly. Before adding pasta taste sauce and add more seasonings to taste (garlic powder, onion powder, or Tony’s)
  • Drain pasta and add to mixture. Toss everything together, serve, and top with parmesan cheese.


This one was definitely harder to type up since I do not measure any of the seasonings. If you are a beginner or unsure of how much simply add a little bit at a time until it tastes good to you. Because this is essentially an alfredo sauce it can be a little bland so you might think it’s a lot of seasoning but we eat for flavor and nutrition, not just nutrition. Let me know if you try this one out and like it! Also serve with bread, all the bread :)
